Just Add A Little Sparkle

Talk about the ultimate glow-up! From rags to riches, this glam gal owned the all-time most fabulous pair of shoes. Yep, you guessed it…Cinderella. This hard-working lass, even when more modern options have arisen, has never lost her popularity.

How on Earth is this young woman whose major life goal was to marry a prince still relevant in the modern age of feminism? With all the other princesses to choose from out there, she remains one of the most popular Disney characters. Why would this be? She didn’t bravely sail the high seas to save her island. Nor did she don a suit of armor and head off to fight a war. She didn’t even battle a monstrous villain. But still, her appeal stays strong.

Perhaps she represents determination in the face of hardship. Courageously, this everyday heroine forged ahead despite her setbacks. Just as we do, hoping for something better if we keep marching ahead. One thing I’ve always admired about Cinderella is that no matter how bad things got, she never changed her personality. She stayed upbeat and kind, even under the most challenging experiences.

Truthfully, I applaud her rebellious spirit. She didn’t just accept her unfortunate circumstances. Instead of moping about in her dusty room, she took charge of her fate. Cinderella snuck out, found a way to wear gorgeous couture to the ball and even snagged the most in-demand dance partner. Sounds like a go-getter to me. I can only imagine everything she accomplished after becoming queen.

In honor of this courageous character, I whipped up some fanciful cupcakes for my twin daughters. Perhaps you might like to try them too!

Cinderella Cupcakes

Decorations

  • Pink sugar sprinkles
  • Mini crowns


Vanilla Cupcakes

  • 2 cups unbleached all-purpose flour
  • 1 1/4 cups sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract

Place rack in the middle position and preheat oven to 350 degrees Fahrenheit. Next, in a large bowl, combine the sugar, flour, baking powder and salt. Then add in the rest of the ingredients, and beat with an electric mixer until smooth. Pour the batter into lined cupcake pans. 

Bake for 18-20 minutes until an inserted toothpick comes out clean. Let cool so you can frost and decorate. 

Vanilla Buttercream Frosting 

  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 teaspoons vanilla extract 
  • 2 tablespoons milk 

First, with an electric mixer, beat the vanilla extract and butter in a medium bowl. Then slowly mix in the powdered sugar, and beat. Now pour in the milk. Lastly, using the electric mixer, beat the mixture until it is smooth and fluffy.

Now decorate the tops of the cupcakes with frosting. Then scatter the pink sugar sprinkles on top. Lastly, press a small crown into the center of the frosting. Repeat for all cupcakes. 

Makes 14 cupcakes  

Note: If you prefer an easier version use store bought cake mix and frosting. Or…just pick up undecorated cupcakes and embellish them yourself!
